Found one of the best veggie meals I have ever had in a Weight Watchers book lol.

Warm White Bean Salad

4 tsp olive oil 4 plum tomatoes, chopped 1 onion minced 1/4 cup diced green and red bell pepper 2 tbsp minced sage 1 garlic clove salt to taste (about 1/4 tsp) pepper to taste (about 1/4 tsp) 1 16oz can of cannelli beans, rinsed

Heat oil in a medium nonstick pan. Add the tomatoes, onion, bell pepper, sage, garlic, salt, and pepper; Cook, stirring occasionally, until the sauce thickens, about 5 minutes. Take off the heat and stir in the beans. Ready to eat.

It only gets better as it sits in the fridge, so don’t be afraid to make a ton and eat it all week lol. We added celery also. Try different kinds of beans in the mix aswell. Enjoy!
