Well three classes and one lab into A and P and I am wondering how boring this class will be. Almost everything we have done is a review. Managed to fly through my lab and spent the rest of the time helping the rest of my lab group. Should be an okay class.

Spent Wednesday making dinner for my parents after class. Sweet Italian Sausage and Broccoli Rabe soup, it was very good, would like to play with this one. Reminds me of the Cod and Garbanzo bean soap my mother makes.

Sausage, Beans and Broccoli Rabe Soup

2 tablespoons extra-virgin olive oil 1 1/4 pounds Italian bulk sweet sausage 1 medium chopped onion 1 chopped carrot 1 large potato, peeled and chopped into small dice 2 cloves chopped garlic 1 bay leaf 2 cans white beans, drained salt and pepper 4 cup chopped broccoli, rabe and other greens 2 quarts chicken stock Grated Parmigiano Reggiano or Pecorino Romano, to pass at table

Heat medium soup pot over medium-high heat. Add the olive oil and sausage and brown. Add veggies, bay leaf and beans. Season with salt and pepper. Cook mixture 5 minutes to begin to soften the vegetables. Add rabe and wilt. Add stock and cover pot. Raise heat and bring soup to a boil. Reduce heat to simmer and cook 15 minutes.
