I have decide to work my way through Solo Suppers, a cookbook by Joyce Goldstein. Many of the dishes are simple and include ideas to vary the recipe. Today I made “Cream of Potato Soup with Variations”. It is still on the stove simmering yet looks very good, wish I had some sourdough rolls to go with it. I altered the recipe abit by adding diced green peppers in with the celery and onions. There are so many ways you could take this recipe. The book suggests croutons, fish, or cheese.
Here is the Recipe:
1 1/2 tablespoon butter
1/2 cup chopped onion
1 1/2 cup peeled, diced russet potatoes (about 2)
2 cups chicken stock
1/4 cup cream, milk, or chicken stock
1 tsp salt
1/2 tsp ground black pepper
In a heavy saucepan, melt the butter over medium heat. Add the onion and saute until tender and translucent. Add the potatoes and stock and bring to a boil. Reduce heat and simmer uncovered until the potatoes are tender.
Remove from heat and add the potatoes, onion, and a little stock to the blender. Puree until smooth. Return to the pan with the stock. Thin the soap with a little milk, cream, or stock, and reheat. Serve. Makes enough for 2-3 servings.
