Incredible recipe my sis sent me. I can’t wait to try this.

2 cups beans, Garbanzo, white, kidney any will do 1 cup brown rice 4 stalks celery 1 red pepper 1 green pepper 1 yellow pepper 1 large onion finely chopped 3/4 cup nuts, pecans, walnuts or sunflower seeds 1 cup dried cranberries

Dressing 1/2 cup vinegar use red, white, balsalmic, fig apple cider, whatever 3/8 cup olive oil 1 1/2 tablespoons brown sugar 1/2 teaspoon dry mustard salt, pepper, dried herbs

in a large bowl (I mean LARGE), mix the dressing. add the chopped onion, allow to sit for 15 minutes while preparing the other ingredients. chop into small pieces, celery, peppers and nuts. combine all in dressing. add rice, beans, cranberries and nuts. toss. adjust seasoning to taste. add more dressing if desired. refridgerate before serving. serve chilled.
