I think I have found the best banana bread I have ever tasted. It was first posted on http://www.simplyrecipes.com/ and is utterly Divine.

3-4 ripe bananas, smashed (a friend once clued me in that Ripe means black. Let the skins turn completely black)

1/3 cup melted butter 1 cup sugar 1 egg, beaten 1 tsp vanilla 1 tsp baking soda pinch of salt 1 1/2 cup of flour.

Preheat the oven to 350 degrees F. (175 degrees C). With a wooden spoon, mix the butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last. Mix. Pour the mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack and slice to serve.
