Had a very good day today. I made homemade potato soup with bacon and cheese. Warm and comforting. I was hanging around the house to baby my heel which is driving me nuts with sharp pains and sprained feelings. I think I have strained the tendon. So instead of running around today and walking the dog three miles we vegged out and I cooked lunch.

Homemade Potato Soup

  1. Skin and dice 4-5 medium potatoes. Rinse and place in a medium pot to boil until tender. Set then aside for later or boil while doing the rest.

  2. Dice 3 sticks of celery and half an onion.

  3. In a large soup pot melt some butter and add the celery and onion. Saute till tender.

  4. Add the potatoes. (add the diced bacon if you do meat)

  5. Add about 4 cups milk, or till the contents of the pot are covered plus about half an inch.

  6. Add what spices you would like ( I did a combination of basil, thyme, black pepper, and a pinch of salt)

  7. Bring to a boil and simmer.

  8. Mix two tablespoons of flour with water till soupy and add to the soup. Stirring constantly to avoid lumps.

  9. Once the soup has thickened, serve! Top with cheese if you like or soup crackers.
