Had to share this recipe. Utterly amazing, I wish I had a picture of when we made it.
Spaghetti Squash
1 spaghetti squash, halved lengthwise and seeded 2 tbsp vegetable oil 1 onion, chopped 1 clove garlic, minced 1 1/2 cups tomatoes, chopped 3/4 cup crumbled feta cheese 3 tbsp sliced black olives 2 tbsp chopped basil
Preheat the oven to 350 F (175 degrees C). Place the spaghetti squash on a baking sheet cut sides up and bake 30 minutes or until tender. Remove from the oven and set aside to cool enough to be handled.
Meanwhile, heat oil in a skillet and saute the onion until tender. Over medium heat add the garlic and saute for 3 minutes. Stir in the tomatoes, and cook till tomatoes are warm.
Use a large spoon to scoop the pulp from the squash and place in a medium bowl. Toss in sauted vegetables, feta cheese, olives, and basil. Serve Warm.
