Managed to make a truly amazing dish for my mother this week. We decided we wanted to have chicken and rice soup for lunch the next day.
Into a crockpot I placed:
two cups of water
three chicken drumsticks
two chicken bullion cubes
one cup beef broth
diced 1/2 of an onion
slices of one lemon
pepper
seasoning salt
about a tablespoon of tuscan seasoning
We cooked this on low for about 4 hours and then set it to the side. The next morning I removed the chicken from the bones and shreaded it. I removed as many of the lemon slices as I could. I cooked about two cups of rice and added this to the stock along with 2 more cups of water. I let this cook down for about 4 hours on high. The soup was utterly amazing. I loved the lemon flavor that came through with the chicken. I strongly encourage anyone to try this.
